Koufteh Ghelgheli Recipe – Persian Meatballs

Koufteh Ghelgheli is one of the traditional and very delicious Iranian dishes that you can serve with rice or bread.

Necessary ingredients for 4 people

Minced meat 500 grams

2 tomatoes

Tomato paste 2 tablespoons

2 onions

1 egg

Enough chickpea flour

Enough salt and black pepper

Enough oil and turmeric

Kalkhli meatball recipe

first stage

To prepare simple Qalkhli meatballs, first grate one of the onions with a fine grater, then squeeze out the excess water and pour the grated onion into a large bowl. Next, we add minced meat to the bowl along with some salt, black pepper, turmeric and eggs.

second stage

Now we knead the ingredients well with our hands until the meatballs are smooth. Adding chickpea flour is only for the consistency of the meatballs, so if the meatballs are loose, we add some chickpea flour to achieve sufficient consistency.

third level

The important thing at this stage is that you should not add too much chickpea flour to the meatballs because it will make your meatballs dry and hard. If your meatball mixture is too hard, you can mix it again with a little water.

The fourth stage

After the meatballs are ready, put a small deep dish on the heat and pour some oil inside it so that the meatballs float in the oil. We take some of the mixture and shape it and put it in oil to fry.

The fifth stage

While the meatballs are frying, we can prepare a special sauce, for this purpose we take the skin of the tomatoes and chop them, and then pour a little oil into a suitable pan and put it on the heat until the oil is hot. .

The sixth stage

Now cut the remaining onion into large slices and fry it in oil until it becomes completely soft and transparent, then add the tomato paste to the pan and fry well until the tomato paste is completely fried.

The seventh stage

After the tomato paste is fried, we add chopped tomatoes to the pan along with some salt, black pepper and turmeric. At the end, we add half a glass of boiling water to the pan and let the sauce reach a sufficient concentration.

The eighth stage

At this stage, we put the meatballs slowly in the special sauce and let them taste with very mild heat. We can serve the meatballs after the water in the pan has completely evaporated and the sauce has started to add oil.

Kalkhli meatballs with aromatic vegetables

If you want to prepare this delicious meatball with aromatic vegetables, first chop 2 tablespoons of aromatic vegetables such as parsley, coriander, mint, etc., then add to the meatball mixture and mix well.
